Ag Hort students explore bushfood creations

St Patrick’s College Year 11 Agricultural and Horticultural Studies students have embarked on a unique challenge at the Ballarat Tech School as part of its Bushfood Innovations program.

Their mission? To design and promote a delicious new take on a classic treat—brownies infused with native Australian ingredients.

Equipped with Generative AI tools, the students experimented with flavors like Strawberry Gum, Pepper Berry, and Lemon Myrtle, crafting recipes that blended tradition with innovation. But the challenge didn’t stop at baking. Using STEM principles, they refined their creations, tweaking ingredients and methods to achieve the perfect balance of taste and texture.

Once their brownies were perfected, the students shifted gears to marketing. With some experiencing AI design software like Adobe Firefly, Microsoft Copilot, and Sumo for the first time, they quickly adapted, developing eye-catching promotional materials to sell their unique products. This exercise not only showcased their creativity but also highlighted how modern technology can revolutionise the agricultural industry.

The day concluded with a product taste-test and promotion competition, where Hunter Vansomeren, Ollie Daykin, and Rory Bell impressed the judges with their exceptional brownie concept, taking out the top prize, Ag Hort teacher and Head of Science James Russell said.

“Well done to these boys and the entire Ag Hort cohort for their fantastic engagement with the program,” he said.

St Patrick’s College launched Agricultural and Horticultural Studies for Years 10 and 11 students in 2025 after two years of research and planning and will offer VCE Units 3 and 4 in 2026.

Principal Steven O’Connor said the new subjects opened doors for those passionate about agricultural sciences, setting them on a path towards both academic and vocational success.

“As a large, regional day and boarding school for boys, the introduction of Agricultural and Horticultural Studies reflects who we are and the important role these industries continue to play in Victoria and across the country,” he said.

“I am thrilled with the response from our students and look forward to this subject becoming one of our strengths in the years ahead.”
